Saffron & Spice is partnering with English Newsom Cellars to feature delicious food and wine pairings. 

Saffron & Spice is an authentic Indian experience in the heart of West Texas. 

Saffron & Spice is owned and operated by Chef Pooja and Vijay Hegde. Growing up in the metropolitan city of Mumbai they were exposed to the multi-cultural cuisines from different regions of India. They bring these varied experiences and diverse expertise to Lubbock. The menus reflect the Indian culinary repertoire and the menagerie of flavors from different parts of India. In addition, they also showcase Indian Fusion creations that are a perfect blend of East meets West. Their supply sources are so important that they travel to the origin of where the food is produced.

They believe that food nourishes the body and soul. The marvelous food on your plate has a story to tell. It has a journey. It leaves a footprint. It leaves a legacy.




Pairing #1:  Paneer Bhurji Bruschetta 

Wine #1:  2021 Reserve Picardan 

Paneer bhurji is a flavorful Indian dish made from crumbled paneer (Indian cottage cheese) cooked with a medley of spices and vegetables. The paneer is sautéed with onions, tomatoes, green chilies, and a blend of spices such as turmeric, cumin, coriander, and garam masala. This creates a rich, savory topping that is slightly spicy, aromatic, and full of depth. The paneer itself is soft and creamy, absorbing the spices and vegetables' flavors beautifully. 

Paring #2:  Palak Shorba with Shredded Amul Cheese and Ghee

Wine#2:  2021 Reserve Viognier 

Palak Shorba is a traditional Indian spinach soup that is rich, flavorful, and comforting. Adding shredded Amul cheese and a dollop of ghee elevates this dish, creating a luxurious and indulgent experience. The combination of rich, earthy spinach, creamy cheese, and aromatic ghee creates a harmonious blend of flavors and textures. The soup is warm and soothing, with a luxurious creaminess and a depth of flavor that is both satisfying and nourishing. 

Pairing #3:  Hariyali Chicken Tikka with a Cabbage Slaw

Wine #3:  2021 Reserve Merlot 


Hariyali Chicken Tikka is a vibrant green chicken dish marinated in a blend of fresh herbs and spices. The marinade includes cilantro, mint, green chilies, garlic, ginger, and yogurt, creating a herbaceous and aromatic flavor profile. The yogurt not only tenderizes the chicken but also adds a slight tanginess. Once marinated, the chicken is traditionally grilled or baked until it develops a smoky, charred exterior while remaining juicy and flavorful inside. 

Pairing #4:  Beef Kheema Puff with a Cilantro Mint Chutney 

Wine #4:  2022 Montepulciano 

A Beef Kheema Puff with Cilantro Mint Chutney is a delightful fusion of flavors and textures, combining the savory and aromatic filling of spiced ground beef with the fresh, tangy notes of a vibrant chutney. The combination of the savory, spiced beef filling and the buttery, flaky pastry creates a delicious contrast of textures. The chutney adds a fresh, tangy, and slightly spicy kick that elevates the dish, making each bite a complex and satisfying blend of flavors. 

Pairing #5:  Chambord Infused Gulab Jamun

Wine #5:  Flirt Blush 

Gulab jamun are deep-fried dough balls made from khoya or milk powder, flour, and a touch of cardamom. The balls are fried until golden brown, resulting in a soft, spongy texture with a slightly crispy exterior. Chambord is a premium liqueur made from black raspberries, Madagascar vanilla, Moroccan citrus peel, honey, and cognac. The liqueur's deep, berry flavor adds a complex sweetness and a slight tartness that beautifully complements the sugary syrup of the gulab jamun. Each bite of the soft, spongy gulab jamun delivers a burst of sweet, fruity, and slightly tart flavors, with the warmth of vanilla and honey adding depth.
