Many cheese and wine varietals have grown up together, oftentimes on the same farm or within a small village. Thus, a complicated, nuanced culinary art has developed from this ancient practice.

~ Viognier & Camembert ~

Camembert is smooth, soft and holds its consistency throughout. Kissed with earthy and sweet tones, this white cheese captivates with its slight hints of caramelized butter and foraged mushrooms. Equal in beauty, Viognier has a light body, and creamy mouthfeel with touches of tangerine, tart kiwi, and pineapple. This buttery pairing is a match made in cheese and wine heaven. Pinot Grigio & Gruyere ~

Gruyere is a hard cow’s milk cheese produced primarily in the Alps of Switzerland, but also largely in France. During the aging process, the wheels of cheese are brushed with salt water, giving the otherwise subtle cheese a slight saltiness. This pulls out the minerality of the Pinot Grigio, a wine otherwise exploding with fruit flavors such as mango, banana, lemon, and nectarine. Having a creamy subtleness, Gruyere is ideally suited to Pinot Grigio’s high acidity and short finish.

 

Cabernet Sauvignon & Asiago ~

Asiago cheese is an Italian cheese that has a flavor reminiscent of Parmesan, but is a bit nuttier and creamier. Fresh Asiago is semi-soft and mild flavored, but, after aging, it develops a sharper flavor. This cheese has a fattiness that matches up wonderfully with the mouth-drying tannins you’ll find in the Cabernet Sauvignon. This wine delivers complex blackberry, cherry, chocolate, and vanilla flavors with a rich and velvety finish. This pairing is certainly a match made in cheese & wine heaven

 

Montepulciano & Manchego ~

This Spanish cheese is made from sheep’s milk and carries fruity, nutty, sweet, and tangy flavors. It is a firm and supple cheese with a pleasant, grassy aroma that pairs perfectly with the boldness of the Montepulciano. The medium body of this Italian red is the perfect combination for a harder texture in cheese - like Manchego. The flavors of red currant, pomegranate, and cinnamon easily match the richness of the cheese. The tannins also contrast with the butteriness of the cheese, creating the perfect marriage of acid and fat.

 

~ Flirt Sweet White & Goat Cheese ~

Dating all the way back to ancient Greece, but claimed by modern-day France, Goat cheese cannot be left out of any good cheese pairing. Goat cheese is often served with honey, making it a flawless pairing with this sweet white wine, whose notes consist of orange marmalade, honey, apricot, and blossom. This light bodied wine, a blend of Picardan and Trebbiano, is carried beautifully by this creamy cheese. The earthy tang of the cheese and the sweetness of the wine act as a sort of yin and yang with each other.
